Ginger and cinnamon overnight oats (with an extra dash of get up & go)

Mornings can be difficult at the best of times, especially when it is cold and dark and anything outside of your duvet feels a little unfriendly. This is why we have dedicated the month of November to making better breakfasts. Teaming up with Rude Health and innocent, we’re bringing you a whole host of brilliant breakfasts to inspire you all to get creative with trail mix toppings. Kicking off the better breakfast month is Holly who has made an extra special museli mix with our Espress So & So. Here’s how you can make it at home:

Now that the mornings are becoming extra chilly, a fuss free breakfast to set you up for the day is always a winner.

Enjoy these quick and simple, autumnal spiced overnight oats with an extra dash of fabulous fuel thanks to Real Handful’s ‘Espress So & So’ mix.

Ingredients (serves 1)

1/2 cup of Rude health ’no flamin’ raisins’ muesli

1 cup innocent almond milk

1 teaspoon ginger powder

1/4 teaspoon of cinnamon

1/2 teaspoon of vanilla extract

Toppings

Real Handful ‘Espress so & so’ mix

1 heaped teaspoon of hazelnut butter

A small handful of blueberries

Optional: a little drizzle of your favourite natural syrup e.g maple syrup, agave, coconut nectar.

Method

Mix the muesli, almond milk, ginger, cinnamon and vanilla together until combined and pop into an airtight container and leave in the fridge overnight.

In the morning, give it a good stir and serve topped with a sprinkling of Real Handful ‘espress so & so’ mix, nut butter and fruit. Finish off with a drizzle of syrup and tuck in.
