Blackcurrant Blast Porridge with Caramelised Apples

One of our favourite bloggers, Jess Ward, put together a recipe for Blackcurrant Blast porridge with caramelised apples. If you try it out, don’t forget to tag us using #betterbreakfast

For the oats:

1/2 cup of rolled oats

¼ cup of mixed frozen berries

1 tsp of honey

Almond milk or water (this will be for the oats to cook in) the amount of milk/water depends on how you like the consistency of your porridge. A good guide is to use enough milk/water to cover the oats completely.

For the caramelised apples:

3 x green apples (making extra of this mixture means you have more for meal prep)

3 tsp of coconut sugar

2 tsp of honey

1 tsp of cinnamon

Method:

For the caramelised apples:

Peel and dice all of the apples and put them into a pan with all of the ingredients. Cook the apples on a low heat until they become soft. The coconut sugar will add a touch of sweetness but will also caramelise the apples.

For the porridge:

Add all of the ingredients for the porridge into a microwave proof bowl, mix together and microwave on high for 2 minutes, stirring halfway through. Microwave for an additional 2 minutes – the timings may change for this depending on your microwave and the consistency of the porridge you prefer. Ensure all of the ingredients are thoroughly combined. Once the porridge is cooked, remove from the microwave and allow to stand for 1 minute — then add a serving of your caramelised apples and the rest of your toppings!

Store the remaining caramelised apples in a container in the fridge.
