Salted Caramel Mocha Breakfast Parfait

Yasmin from Nourishing Yas tried and tested our Waitrose range and made a vegan breakfast mocha as a result. We thought it looked too good not to share, so here is the recipe.

Ingredients

For the mocha oats

1/2 cup rolled oats

1/2 cup almond milk

2 tsp instant coffee

1 tsp maple syrup

1 tsp chia seeds

1 tbsp cacao powder

1 tbsp soya yoghurt

For the chocolate chia pudding

1 tbsp chia seeds

1 tbsp cacao powder

3 tbsps almond milk

For the rest of the parfait

1 pack Real Handful Espress So & So Fruit, Nut & Choc Trail Mix

1 Sea Salt Caramellow plant protein bar

Soya Yoghurt

Fruit

Nut Butter

Method

The night before

Prep the overnight oats by dissolving the coffee in 1 tbsp boiling water. Leave to cool.

Once cool mix the coffee with the almond milk. Add all of the remaining oat ingredients and mix well. Place in an airtight container in the fridge overnight to thicken.

To prep the chocolate chia pudding, add the chia seeds, cacao powder and almond milk to an airtight container and mix until combined. Place in an airtight container in the fridge overnight to thicken.

In the morning

Chop the sea salt caramellow bar in to chunks along with any fresh fruit that you want to use. Remove the overnight oats and chia pudding from the fridge.

In a sundae glass or mason jar, layer the overnight oats with the yoghurt, chia pudding, bar chunks, fruit + nut mix and fresh fruit. Top with a dollop of nut butter. Enjoy!
