Trail Mix Breakfast Cookies⁣

Bekah from @bitesbybekah made us some Trail Mix breakfast cookies⁣ using our new sharing bags (available from Tesco.com) and here was the result. We’re pretty impressed, so much so that we wanted to share Bekah’s recipe with you all, so here’s how she did it in her own words!

Makes around ~12 large cookies

Ingredients

3 small-medium, very ripe bananas⁣

¼ cup apple sauce⁣

¼ cup maple syrup (I used @otesuperfoods’ yacon syrup⁣)

1 flax egg (1 tbs flax + 3 tbs water, whisk together, set for 15 mins)⁣

1 tsp vanilla extract⁣

1 1/2 cups oat flour⁣

1/2 cup ground almonds

1 scoop vegan protein powder (I used @thatprotein pumpkin and chia seed protein⁣)

1 tsp baking powder⁣

½ tsp baking soda⁣

¼ tsp salt⁣

1/2 cup @realhandful’s Blackcurrent Blast Trail Mix (plus some extra for topping)⁣

Method

Preheat oven to 180°C.⁣

Mash bananas in a large mixing bowl until smooth. Add in wet ingredients and mix until combined.⁣

Add dry ingredients (oat flour, almond meal, protein powder, baking powder, baking soda, and salt). Mix together until just incorporated. Then add in the trail mix.

Scoop balls of the mixture onto a silicone mat or lined baking sheet – space them apart to allow for them to spread a bit. Add extra trail mix on top if desired.⁣

Bake for 15-20 minutes.⁣

Cool on the baking tray for ~10 minutes and then transfer to a cooling rack. Enjoy!⁣
