Date and cacao porridge with strawberry chia jam and a stomp of strawberry trail mix:

A recipe made for us by Hannah, @pinchofkale. This gooey, chocolate-y bowl of goodness is like having dessert for breakfast, yet packed full of nutrients, it’s the perfect start to get you going on a chilly morning.

Ingredients (serves 1):

1/2 cup Rude Health Fruity Date porridge oats

1 cup innocent Oat Milk

1 or 2 dates, chopped*

1 tbsp cacao powder (add more or less depending on how chocolate-y you want it)

*The dates add sweetness and a subtle caramel-y flavour. Since there are chopped dried dates already mixed into the oats, you may wish to use less and/or more depending. Fresh or dried dates will work just as good as the other – whatever you have!

Chia jam:

2 cups of fresh or frozen strawberries

1 tbsp chia seeds

Splash of water (if needed)

Additional toppings:

Real Handful’s Strawberry Stomp trail mix

Fresh strawberries

Method

Start by making the chia jam. Add the strawberries to a saucepan and heat over a medium heat. You may need to add a little bit of water at this point, particularly if using frozen. Cook until they start to break down and become syrup like (5-8 mins).

Whilst it’s cooking, mash the fruit (a fork will do!), leaving it as smooth or as lumpy as you like. At this point, take off the heat and mix in the chia seeds. Leave to one side.

Next, add the oats and oat milk to a separate saucepan.

Place the saucepan over a medium heat and cook for 1-2 minutes.

Stir in the chopped dates and cacao and continue to cook until you reach your desired consistency.

Take the oats off the heat and pour into a bowl.

Top with fresh strawberries, chia jam, strawberry stomp trail mix and enjoy!
