In the second week of our Better Breakfast Series, food blogger Evie Jayne made us a delicious Mint Choc porridge mix. Check out the recipe below and follow the link to our Instagram in order to win your own Better Breakfast kit.
Ingredients:
40g rolled Moma oats
½ ripe banana, mashed
1/3 finely grated courgette
150ml of Rebel Kitchen Mylk
1 tsp peppermint extract
1 tbsp cocoa or cacao powder
Toppings:
Real Handful Mint Chocolate Chipper trail mix
Fresh fruit, such as raspberries, strawberries, blackberries, sliced banana
Nut Butter (optional)
Instructions
Add your oats to a small pan then pour over the milk.
Cook over a medium high heat. Once it starts to bubble, turn the heat down and mix in the other ingredients.
Allow the porridge to simmer until it reaches your desired consistency, stirring frequently.
Top with your fruit/berries of choice.
