Blackcurrant & Banana Breakfast Loaf

Realistically who has time to make an elaborate and healthy breakfast? It’s tough to fit it all in. So here’s a recipe for a refined sugar free banana and blackcurrant loaf, you can make it on Monday and eat it through till Friday. You can thank us later.

Ingredients

3 Bananas

2 Eggs

1/4 cup of greek yogurt

1/3 cup of honey

1tsp vanilla extract

1tsp of baking powder

1 and 1/2 cups of wheat flour

1 cup blueberries

1 sharing bag of Real Handful Blackcurrant Blast

Method

Mash three bananas in a bowl

Mix in two eggs, 1/4 cup of greek yogurt, 1/3 cup of honey, 1tsp vanilla extract and 1tsp of baking powder

Give this all a good whisk

Then add 1 and a half cups of wheat flour

Whisk the mix again and then add in 1 cup of blueberries and important 1 sharing bag of Real Handful Blackcurrant Blast

Gently stir this

Pour the mixture into a greased baking tin

Bake on 180 degrees for 50 minutes

Take out, leave to cool and enjoy!
