Our final episode of Veganuary involves a lot of peanuts (just how we like it🤘). For this weeks Cooking for Peanuts we have created a delicious dinner that will keep the family happy.Â
This curry is full of flavour and perfect as a meal prep, family dinner or Friday night 'fakeaway'!
Ingredients:
- 2 tbsp oil olive
- 1 chopped onion
- 3 chopped garlic cloves
- 1 red chilli
- 2 tsp grated ginger
- 2 tbsp garam masala
- 100g smooth peanut butter
- 400ml coconut milk
- 400g can chopped tomatoesÂ
- A handful of chopped corianderÂ
- 25g Real Handful Sea Salted Good Nuts (chopped)
- 25g Real Handful Hot Chilli Good Nuts (chopped)Â
Recipe:
- Fry onion until soft and translucent. Add garlic, ginger and chilli then fry for 1 minute. Finally add garam masala and fry for another minute.
- Add vegan chicken to the pan.
- Add peanut butter, chopped tomatoes, coconut milk then stir and simmer for 25 minutes.
- Once the sauce has thickened add 25g chopped Real Handful Hot Chilli Peanuts and coriander then stir.
- Serve with rice and add 25g Real Handful Sea Salted Peanuts as a garnish.
